The grapes come from 35+ year old vines from the French commune of Villars Fontaine. Direct pressed and fermented on its lees for 3 months, before 10 more months of aging with the lees removed. Winemaker Oronce de Beler's philosophy is to showcase the fruit and terroir, intervening as minimally as possible with VERY conservative addition of sulfites.
