This is an ancient Roman grape variety that was revived by Cincinnato to continue the legacy of ancient Lazio. The wine is vinified with destemmed grapes with a soft pressing and 12 month aging in stainless steel. An incredibly delicate wine with elegant complexity that will tackle the strongest flavors of any dish.
